Biscuits

  1. Preheat oven to 450°F
  2. Sift together flour, baking powder, and salt
  3. Cut in butter or shortening, using a pastry blender or 2 knives, until the size of small peas
  4. Make a well in the center and add milk
  5. Stir for about 1 minute
  6. Drop walnut sized dabs of dough onto an ungreased baking sheet and bake for 12-15 minutes

Gravy

  1. Brown sausage in a large skillet
  2. Use a slotted spoon to remove the sausage onto a paper towel lined plate. Pour off all but 2 tbsp of the drippings. Add butter if necessary
  3. Stir in flour. Wisk until well combined and smooth
  4. Slowly whisk in milk, stiring constantly
  5. Simmer for 5 minutes or until thickened
  6. Season with salt, black pepper, and hot sauce
  7. Fold reserved sausage into the sauce before pouring over biscuits
