Ingredients
Makes 2 quiches
- 2 pie crusts
- 8oz cooked bacon, chopped
- 3 cups (12oz) shredded cheese (cheddar/swiss or both)
- 1 1/2 cups broccoli, cooked but still firm, dried and chopped
- 2 cups heavy cream
- 6 eggs (plus 1 yolk for brushing crusts)
- 1 small onion, grated
- 1/4 teaspoon nutmeg, grated
- 1 teaspoon salt
- 1/2 teaspoon white or black pepper
Directions
- Prepare the crusts according to package directions (also ignore directions and pierce with a fork before baking).
- Preheat oven to 375°F
- While still warm, brush with beaten egg yolk.
- Divide cheese and sprinkle onto the crusts.
- Divide bacon and broccoli and add on top of the cheese.
- Whisk together cream, eggs, onion, nutmeg, salt, and pepper.
- Divide mixture and pour into the crusts.
- Bake 30 to 40 minutes, until a knife inserted in the center comes out clean. Let stand 10 minutes before slicing.
