Cornbread and Beef Skillet Pie

INGREDIENTS
  • 1 lb. Lean Ground Beef
  • can Ranchero Beans
  • can corn kernels
  • 1 cornbread recipe (Cornbread)
  • 2 oz. pepperjack cheese
  • Taco Seasoning


DIRECTIONS
  1. Heat oven to 400 degrees F. In a large oven-safe skillet, cook beef over medium-high heat, breaking it up with the back of a spoon until browned, 5 to 7 minutes. Stir in the beans and corn and cook simmer for 2 minutes.
  2. Season to taste with taco seasoning.
  3. Meanwhile, prepare the cornbread according to package directions. Spread the cornbread batter over the beef mixture, leaving a 1/2-inch border all the way around.
  4. Bake until golden brown and a toothpick inserted into the cornbread comes out clean, 15 to 20 minutes.
  5. Sprinkle with cheese and bake until melted.
  6. Let cool for 5 minutes before serving.
