White Chicken Chili
Ingredients
- Chicken breast (1lb)
- Yellow onion (1, diced)
- Garlic (2 cloves, minced)
- Chicken broth (3 cups)
- Great northern beans (30oz, canned and drained)
- Green chilies (8oz, canned and diced)
- Corn kernels (15oz)
- Salt (1 tsp)
- Black pepper (1/2 tsp)
- Cumin (1 tsp)
- Oregano (3/4 tsp)
- Chili powder (1/2 tsp)
- Cayenne pepper (1/4 tsp)
- Cilantro (1 bunch)
- Cream cheese (4oz, softened)
- Half and half (1/4 cup)
- Jalapeno (for serving)
- Avocado (for serving)
- Sour cream (for serving)
- Tortilla chips (for serving)
- Jack cheese (for serving)
Directions
- Add chicken to the bottom of a slow cooker.
- Sprinkle with spices (salt, pepper, cumin, oregano, chili powder, and cayenne).
- Top with onion, garlic, beans, chilies, corn, broth, and a small handful of cilantro.
- Cover and cook on low for 8 hours (4 on high).
- Remove the chicken to a mixing bowl, shred, and return to the slow cooker.
- Add cream cheese and half and half, cover, and cook on high for 15 minutes or until creamy and thickened slightly.
- Serve over rice and with toppings.
